The vintage " Le Chevalier " of the Castle Falfas is a biodynamic wine. This is the top range vintage of the domain and it profits of a particular care. Old vines (75 years) and low yield (18 ha / hl) assures a remarkable concentration. This well structured and warm wine is supported by strong tannins who it a big potential of ageing. A rare and well-kept vintage.
Winemaking : the old vineyards was harvested from September 30th. Light pressing before putting in tank, total destemming and cold maceration during 48 hours to extract the aromas and the tannins. Alcoholic fermentation ( native yeasts) during 7 days in tanks with controlled temperatures (25-30°C). Maceration during 3 weeks with malolactic transformation in tank before first assembly.
Ageing : barrelling in December, 2010. Ageing in new french oak barrels during 22 months. Bottling in December, 2012.

The Castle Falfas is a 20 hectares vineyard located in the appellation Côtes de Bourg (Bordeaux region). It is situated on the south slopes of the hillsides of the right bank of the Gironde, a beautiful region called "small Girondist Switzerland". The history of the domain goes back to the XIVth century when it was up to Lords de Lansac whose wines were exported with privilege to the Court of Edouard, crown of England.
The domain is now managed by the family Cochran. They are very sensitive to maintain the quality of their soil. They are a part of precursors of the biodynamic culture. Indeed, they converted the domain in 1988.
The soil of Falfas is of argilo-calcareous type compound of limestone with starfishes, ideal for vines Merlot, Cabernet and Malbec which are planted there. The Cochran family applies a detailed charter of organic culture which is regularly controlled by an independent organization. No chemical of synthesis is used.
The naturally rich expression of the terroir and a well-kept wine making bring to these wines of an irreproachable quality a rich and generous character.
