The vineyard of the Domaine Sauzet consists of vines planted in the years 2000-2002 around the estate and old plots located in the surrounding municipalities. François Massol cultivates a wide variety of Mediterranean and Atlantic grape varieties, young and sometimes very old vines, conducted in double Cordon de Royat or Gobelet. The yields are controlled and the harvest is done by hand, in crates, with selection of the best bunches.
The old cellar has been completely renovated and a cellar buried for barrel rearing and storage of bottles was created in the early 2000s. Tillage has replaced weed control, systemic pesticides are banned, harvesting is manual, rainwater is collected, solar panels produce hot water and electricity, etc. Certified organic, the Domaine works in constant respect of its environment.
