The Château de Monthelie was built in 1746 by François Fromageot. Cellars testify of a wine-producing activity since ancient times. Situated in the village of Monthelie, in Burgundy (Côte-d'Or), the winery is in the hands of the family Suremain since 1903. The wine-making exploitation is managed since 1983 by Eric and Dominique de Suremain. Eric de Suremain, son, grandson, great-grandson of winemaker, knew a childhood surrounded by the works of the vineyard. It is thus quite naturally that he turned to wine-making studies.
The vineyard is led in organic and biodynamic farming since 1996. The Castle of Monthelie works its wines with the wood, which contrary to the stainless steel, the metal or the concrete, which have the best properties for the grape harvest, in particular for the expression of native yeasts. The fermentations are realized in big wooden tanks, of which some are very old, which are maintained by a Burgundian expert.
The ageing of the wine is assured by oak barrels and by big wooden tanks of 35 hl and 70 hl which are made in some kilometers, near Beaune, in order to allow the wine keeps the freshness and the fruit. The malolactic fermentation takes place naturally in these barrels. The ageing of white wines last 15 months, and for the red wines it last from 18 to 20 months according to vintages.
