Vinification : It comes from a very ripe grapes and vines with low yield (25 hl/ha). From the first hours after the start of fermentation, the juice have strong spicy notes. Aging in concrete tank on fine lees gives fin tannins and sublime the flavors of malbec.

The Château Lacapelle Cabanac is located in the Lot valley on clay- limestone soil, enjoys the southern winds and has the denomination of Cahors. After two centuries of inactivity, the castle resumed its viticulture activity in 1978 when the owner moved in tanks for the winemaking process. Thierry Simon and Philippe Verax lead the vineyard since 2001. They began immediately the renovations of the cellar and the conversion to organic farming (AB ) certification obtained in 2005. They even went further by practicing biodynamic viticulture allowing them to diminish the dose of treatment products (sulfur and copper). Today the vineyard is mature and yields are naturally low, a guarantee of quality. The 19 hectares are cultivated with two varieties of vines: Malbec, typical of the region and Merlot . Their wines are now recognized by consumers and professionals. The Château Lacapelle Cabanac is an exemple to follow at the region of Cahors.
