La Célestière is a certified Organic Agriculture estate which extends over a total of 26 hectares of century-old vines preserved from chemical fertilizers and other weedkillers. The terroir is expressed through constant tillage of the soil and the subsoil, accompanied by a few organic inputs.
The harvest is done by hand, in crates, and is from a selection presented from the bunches. Also the average production is it developed limited, oscillating between 20 and 25 hectoliters, figures well below the rendering stopper of the appellation, this contributes to the quality of the wines produced by the domain.
The raisins are received by gravity in thermo-regulated stainless steel and concrete vats with integrated punching down. The maceration is done hot and cold, with a long vatting time for the reds. Vinification and aging in ovoid vats (concrete egg) are carried out on the White Wines. While, for the reds, it is a aging in tuns or demi-muids or concrete depending on the cuvées.
