It was built in 1846 by Hector Henderson but was demolished and rebuilt between 1972 and 1974. From now on, Caol Ila is the largest distillery on the island of Islay with nine distilleries.
The particularity of this distillery is that it carries out a double distillation in two different types of stills (wash stills and spirit stills) in the shape of a very flared pear at the bottom and gradually tightening up to the gooseneck. This makes whisky unusual, with smoky, iodized aromas and thyme notes. These spirits then have the property of being good from their youth (7-8 years old), to develop further thereafter.
Today, Caol Ila belongs to Diageo and its production is more than 3.6 million litres of alcohol per year: it is considered by experts to be one of the best distilleries in Scotland, provided that the whisky has been properly aged and bottled with care.
