- Scotland - Single Malt Whisky - 70cl
- Appearance : Deep straw yellow.
- Nose : Rich and complex at first, then evolving on milky notes of sweet almond, cirtonated aromas and liquorice.
- Palate : It is more and more smoky with aromas of dried fruit, on a background of olive oil. Persistent finish that is sweet, floral and slightly acidic.
The opinion of VIGNAPART : "This Caol Ila 12-year-old is a whisky of character, finely peaty and a flagship of the Hidden Malts range ("confidential whiskies"). This single malt is both iodized and peaty, fruity and dry, fresh and sweet, with notes of olive oil, almond and citrus fruits detectable both on the nose and in the mouth. This must-see in Islay, with its very charming profile, will delight the palate of connoisseurs..."
The Caol Ila distillery is located on the northeast coast of Islay Island, near Askaig Harbour in Scotland where it is not uncommon to see a few seals...
It was built in 1846 by Hector Henderson but was demolished and rebuilt between 1972 and 1974. From now on, Caol Ila is the largest distillery on the island of Islay with nine distilleries.
The particularity of this distillery is that it carries out a double distillation in two different types of stills (wash stills and spirit stills) in the shape of a very flared pear at the bottom and gradually tightening up to the gooseneck. This makes whisky unusual, with smoky, iodized aromas and thyme notes. These spirits then have the property of being good from their youth (7-8 years old), to develop further thereafter.
Today, Caol Ila belongs to Diageo and its production is more than 3.6 million litres of alcohol per year: it is considered by experts to be one of the best distilleries in Scotland, provided that the whisky has been properly aged and bottled with care.
